- Black eyed beans
This is a deliciously different recipe that is easy to make and oh-so flavourful. Great to serve with your favourite spicy sauce and a green salad.

- 225g streaky bacon
- 725g tinned black-eye beans, rinsed and drained
- 2 tablespoons minced shallot
- 5 tablespoons chopped roasted red peppers
- 3 tablespoons plain flour, or as needed
- salt and black pepper to taste
- 1 tablespoon butter
- 1 tablespoon vegetable oil

- Place the bacon in a large, deep frying pan and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a kitchen paper-lined plate.
- Mash the black-eye beans in a bowl with a fork. Crumble the bacon into the peas, and stir in the shallot, red peppers and enough flour to make the mixture stick together. Season to taste with salt and pepper. Form the black-eye bean mixture into 4 patties.
- Melt the butter with the vegetable oil in a large frying pan over medium heat. Cook the patties until golden brown and crispy on each side, about 4 minutes per side.

grew up mighty poor, meat was scarce on our table. my dad used to take the peas, mash them up and put all the seasonings you would use to make sausage, sometimes including some red pepper flakes, added some flour i think, anyway made them into patties and fried them up in bacon grease, He called it pea sausage,,you would never guess it wasn't sausage. My dad has been gone many years, I still make them sometime-31 Dec 2012
these were really good, I had some leftover black eyed peas that needed to get used up- they were dry beans, of course soaked and cooked. I used my hand blender to mash them, but left some a partly unmashed. I also roasted the red peppers myself. Next time I make them I think I will add more flour, so they stick together better. Also I think they need a little bit of sauce. I will try a few out next time and see what I like best.-16 Jan 2011

Tasty! I used blackeyed peas with jalapenos which added just enough spice. My family loved them and say that the recipe is a keeper. The texture is very soft and I would like to make it a bit firmer.-04 Sep 2010
