- 1 large green pepper, diced
- 1 large red pepper, diced
- 1 large onion, diced
- 4 tablespoons vegetable oil
MethodPrep:25min ›Cook:30min ›Ready in:55min
- Place the potatoes into a large pot and cover with salted water. Bring to the boil over high heat, then reduce heat to medium-low, cover, and simmer 10 minutes. Drain, then set aside until cool. Once cool, dice into cubes.
- Combine the potatoes, green pepper, red pepper and onion in a mixing bowl. Drizzle in the vegetable oil, and gently stir until evenly coated.
- Cook the mixture in a nonstick frying pan over medium-high heat until crispy and golden brown, stirring occasionally, about 20 minutes.
Tip:
If you have extra: before frying, spoon the mixture into resealable food bags and freeze. When you need it, toss as much as you want into a hot frying pan. Add more vegetable oil when cooking if needed.

Hey everybody, I fixed the "sticky" problem! After dicing the potatoes, rinse them under water. Drain well so they don't freeze together in a frozen ball of water, tho. This takes away so much of the starchiness. They fry much better this way and aren't mushy. Yummy recipe, Striker.-06 Aug 2011

This recipe is great! However, I can't leave well enough alone and I add 2 teaspoons seasoned salt with pepper per bag!-22 Mar 2010
