Dissolve the yeast in a little cream, then let it rise for about 10 minutes.

Mix margarine, lard, flour, salt, egg yolks, yeast and cream. We make a suitable dough, which we let rise for about 30 minutes.

We spread the dough so that it is a finger thick, then we cut it into cubes.

Prepare the ground ham filling, egg whites, salt and pepper.

Put the filling in the croissants and roll.

When they are almost ready, take the tray out of the oven and grate the cheese on top, then bake them for a few more minutes.
